it doesnt matter how you like your Lamb. Cut into Chops, carved into Popsicles, nicely Frenched, Full Rack it doesnt matter just be sure to LET IT REST for at least 10 minutes.

  • - 2 Racks of Lamb, Frenched, like kisses
  • - 1 pt Potsto
  • - 2 Tbsp Salt
  • - 2 Tbsp Pepper
  • - 2 oz mint
  • For the Marynade you will start by mixing the Potsto with the mint, set aside. Season the fat cap side of the rack of lamb with salt and pepper and sear in a hot cast iron pan. you will only want a light golden brown on this as it will be finished in the oven. Once seared spread the mint Potsto on the fat side of the lamb and throw in a 420 degree convection oven. Cook to your desired doneness and be sure to let the lamb rest for at least 10 minutes after you cook it.
